The Windmühlenmesser ceramic sharpening stone "Wasserschärfe Double" is a high-quality combination stone with two differently fine grits:
- White side (grit 1200): Ideal for correcting minor burrs and unevenness, as well as restoring the basic grind.
- Yellow side (grit 4000): For fine grinding or polishing – this is where the blade gets its final sharpness and smoothness.
The whetstone is made of fired ceramic with aluminum oxide as the abrasive. This combination ensures a particularly hard, dimensionally stable surface that hardly wears down and remains flat for a long time. This results in a uniform, precise grind with low material abrasion.
Application:
Soak for about 10 minutes before use and keep it moist during sharpening. New abrasive grains are continuously released during sharpening; the resulting fine abrasive residue is the actual polishing agent and provides maximum sharpening performance – therefore, do not rinse while sharpening. After sharpening, rinse the stone and allow it to dry thoroughly.

Which wood is best for a cutting board?
For a cutting board, it's important that the material is resilient and durable, but not too hard, as otherwise the knives would dull too quickly. Glass, for example, is unsuitable for this. For this reason, we use hard, robust solid wood for the mill board. Another advantage is that it's easy to maintain and can even be sanded if necessary. There are small differences in our materials, which are described in the next question. However, we recommend choosing your mill board primarily based on your personal taste.
